Apple Muffin Mix
2 cups self-rising flour
1/2 cup sugar
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup chopped dried apples
In a large bowl, combine all the ingredients. Place the mix into an
airtight container. Makes 1 package.
To Use:

1 package Apple Muffin Mix
1 egg
3/4 cup milk
1/4 cup vegetable oil
Preheat the oven to 400 F and grease 12 muffin tins. Stir all ingredients
until they are just blended. Do not overmix. Spoon the batter into greased
muffin pans, filling 3/4 full. Bake for 15 to 18 minutes, or until golden
brown.

2 cups Oat Bran or Quick Oats
5 cups Unbleached Flour
3 tsp. Cinnamon
1 tsp. Nutmeg
6 tsp. Baking Powder

Blend Together and divide evenly into 4 pkgs.
Attach Tag:
3 cups Basic Muffin Mix
1/2 cup Oil
1/2 to 1 cup Sweetener (Honey, Maple Syrup, etc)
1 cup Fruit or Vegetable Puree (Pineapple, Apple, Carrot, Zucchini, Sweet Potato, Banana, Berries or Apple Sauce)
1/2 to 1 cup Milk
1 to 2 Egg(s)
1/2 to 1 cup Nuts, Raisins, Seeds or other Dried Fruit
Combine all ingredients. Do not overmix. Bake at 350 degrees for 20-25 minutes.

Easy Frittata
I have had some eggs in the fridge for a while. We haven't been using them for breakfast, so I wanted to have a breakfast for dinner meal. I found this recipe on http://www.kraft.com/. It isn't a site I use often, but this one is a basic recipe with tons of taste. Clay and the girls really liked it, too. Clay told me he likes it better than quiche, and he likes quiche. I went to the grocery store today and forgot to buy the bacon. Luckily, I had some smoked turkey sausage in the fridge so I added that as an option for cooking. It gave it a great taste, but the biggest taste factor was the basil. It added great smell and taste!
Ingredients
5 whole Eggs
4 Egg whites
2 Tbsp. Water
1 cup Shredded Mozzarella Cheese, divided
1/2 cup chopped seeded tomatoes
4 slices cooked, crumbled bacon or smoked turkey sausage
1/4 cup chopped fresh basil
Directions
HEAT oven to 350°F.
Beat whole eggs, egg whites and water with whisk in medium bowl until blended.
STIR in 1/2 cup cheese, tomatoes, bacon and basil. Pour into greased 9-inch pie plate.
BAKE 25 min. or until puffed and golden brown. Sprinkle with remaining cheese; bake 5 min. or until melted. (Took longer than the 30 minutes)

How to Make Mini-Frittatas
Prepare egg mixture as directed; pour into 12 (2-1/2-inch) muffin cups sprayed with cooking spray. Bake 20 min.; sprinkle with remaining cheese; bake 3 to 5 min. or until melted. Makes 6 servings, 2 frittatas each.

Farmer's Casserole
This is a great breakfast casserole that will feed six. It is also a recipe to increase by a dollop to feed more. This recipe needs to be chilled overnight, or for several hours before serving. It can also be frozen.
3 cups frozen shredded hash brown potatoes (24 oz. bag)
1 1/2 cups of cheese (cheddar or Monterey jack or combination)
1 cup of diced meat (Canadian bacon or sausage)
1/4 cup green onions
4 beaten eggs (1 cup frozen egg product)
1 12 oz. can of evaporated milk
1/4 t pepper
1.8 t of salt
Grease a 2 quart square baking dish. Arrange potatoes evening in bottom of dish. Sprinkle with cheeses, ham or sausage, or green onions. In a medium mixing bowl, combine eggs, milk, pepper, and salt. Pour egg mixture over potato mixture in dish. Cover and chill, or freeze.
Thaw completely. Bake uncovered in a 350-degree oven for 40-45 minutes or until center appears set. Let stand 5 minutes before serving. Cheese can be sprinkled on top during the last 15 minutes of baking.

Goldenrod Eggs with White Sauce
Okay, it is another boiled egg recipe. I remember my mom making this as a kid- but we called it "Stuff." I remember not knowing what to call it- so it was "Stuff." I made it last night, but could work on my white sauce. I know that is a practiced skill. So, if you have any hard boiled eggs left- enjoy this tasty, easy recipe.

Goldenrod Eggs
- 6 hard-boiled eggs
- 4 pieces of toast
- 1 1/2 cups of white sauce
Chop egg whites into the white sauce. Serve over toast. Sprinkle yolks on top.
White Sauce
- 2 tablespoons of butter
- 2 tablespoons of flour
- 1 cup of milk
- dash of pepper
- salt to taste
Melt butter in to pan. Add pepper and flour; blend together. Slowly add in milk, whisking in as you add. Cook until thick and smooth. Salt to taste.

Crunchy Granola
I can't believe I made this recipe this weekend, but it will become a staple item now. I don't know what possessed me to make it. I saw this, it looked good, so I made it. Clay also told me a few weeks ago he likes the granola on top of the yogurt at McDonald's. I know this is much healthier than that! :) So, here it is:

- 4 cups of old fashioned oats
- 1 cup nuts, toasted and chopped (optional)
- 1/4 cup packed light brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon of salt
- 1/2 cup butter
- 1/4 cup honey
- 1 teaspoon of vanilla extract
- 1 cup of chopped dried fruit (I tried raisins and apricots this time)
Directions:
- Preheat oven to 300 degrees F
- Line a rimed baking sheet with foil and grease generously with oil or spray.
- Mix all dry ingredients together in a bowl
- In a small saucepan over low heat, melt the butter and honey, stirring to combine. Add the vanilla and stir.
- Pour the honey butter over the oat mixture and stir to combine. Turn the mixture into the prepared pan and spread over an even layer.
- Bake for 15 minutes, remove from the oven and stir. Return the granola to the over and bake for 10-15 minutes more, checking to make sure it doesn't burn
- Cool in the pan on a cooling rack, the transfer to an airtight contain.

Ham and Cheese Quiche- $10.00 Meal

This is another bonus recipe, because it makes two. I think with some of my savings from other days, the total should still be okay, but this is the most expensive meal so far. It is however, something different. That is really what I wanted more than anything else. So, enjoy!
Ingredients
2 (9 inch) pastry shells (Pillsbury 2 for @ 2.00)
2 cups diced fully cooked ham ($2.69)
2 cups shredded sharp Cheddar cheese ($2.99)
1 onion chopped (purchased earlier)
4 eggs ($2.75 - cage free/ grain fed)
2 cups milk

2 cups diced fully cooked ham ($2.69)
2 cups shredded sharp Cheddar cheese ($2.99)

Directions
Line unpricked pastry shells with a double thickness of heavy-duty foil. Bake at 400 degrees F for 5 minutes. Remove foil; bake 5 minutes longer.

Pour into shells. Cover and freeze for up to 3 months. Or cover edges with foil and bake at 400 degrees F for 35-40 minutes or until a knife inserted near the center comes out clean. Let stand for 5-10 minutes before cutting.
Serve with jar Cinnamon apple sauce ($1.39)
Grand Total: $11.82 (without milk) - so price wise it was a BUST, but it should average out during the week

CREAM CHEESE SQUARES

Mmmmmm - looking for a delicious recipe for Christmas morning? (Or any morning, for that matter?) Try this! It's delicious:
Ingredients:
2 (8 ounce) cans refrigerated crescent roll dough
1 (8 ounce) packages cream cheese
1 cup white sugar
1 teaspoon vanilla extract
1/2 cup margarine, melted
1/4 cup white sugar
1 teaspoon ground cinnamon
Preheat oven to 350 degrees F. Grease a 9x13 inch pan. Press one can of the crescent rolls into the bottom of the prepared pan. Mix together the cream cheese, 1 cup of sugar, and vanilla until smooth and creamy. Spread over the crescent layer. Unroll the second can of crescent rolls and lay them on top of the cream cheese layer. Do not press down. Pour the melted margarine over the entire pan. Combine the remaining 1/4 cup of sugar and cinnamon; sprinkle over the top. Bake for 25 to 30 minutes, or until the top is crisp and golden. Enjoy!
*The original recipe calls for 2 packages of cream cheese....I have made it both ways and I prefer using just one package of cream cheese; however, it's good both ways.

Sage Sausage Bread
This is a recipe that Pam Nutter made for breakfast over the Christmas holiday. I thought it was really good and a different spin on things! It's good breakfast that can be made ahead of time.
1 pound sage pork sausage
1 jalapeno pepper, chopped
1/2 cup shredded Swiss cheese
1/4 cup grated Parmesan cheese
2 eggs, beaten
1/3 cup milk
2 cups buttermilk baking mix
1/4 cup melted margarine
1 teaspoon salt
2 tablespoons chopped fresh parsley
Preheat oven to 400F. Grease a 9x13 inch baking pan.
In a large skillet over medium heat, cook and stir the sausage and jalapeno until the sausage is well browned, about 10 minutes. Drain; set aside to cool slightly.
Stir together the Swiss cheese, Parmesan cheese, egg, and milk in a large bowl. Stir in the biscuit mix, margarine, salt, and parsley. Add the sausage mixture; stir until well combined. Pour the mixture into the prepared pan.
Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 35 minutes or until golden brown. Serve warm or cold.
Pam used muffin pans instead of a baking pan. This turned out really well! You may not have to bake it as long in a muffin pan.
